"We roast this coffee a little bit deeper, with the goal of achieving a nice umami flavour and very low acidity without the bitterness. If we compare it to Guatemala at the same roast level, for example, Guatemala would have much higher bitterness. This Papua New Guinea takes a little bit darker roast very gracefully while still delivering complexity and nuance."

Velvet Sunrise started with a spark—literally, in someone’s kitchen—when founder Neil stumbled across home coffee roasting while working his old job in civil engineering. That chance encounter with a green coffee pioneer led to 25+ years of roasting, experimenting, and chasing the kind of complexity you just couldn’t find on grocery store shelves. One unforgettable Guatemalan coffee from Huehuetenango sealed the deal, and Neil knew he had to share the good stuff. What began as small-batch roasts in Stouffville turned into a full-fledged roastery by 2010—and Velvet Sunrise has been roasting with purpose ever since.
