JagaSilk - CAFE STANDARD Yabukita Kuromamezaka
"Mr. Yamaguchi is somewhat of an eccentric historian tea farmer doing all sorts of projects like white teas made from wild trees, growing Sencha like it would have been done by Nagatani Soen, and growing single field tencha for JagaSilk with a full on commitment to organic. We find his teas incredibly aromatic and complex. No punches pulled on bitters, but the umami that does come through is naturally created. We feel his work is highly reflective of how tea would have tasted before the advent of intensive fertilization."
