Description

This coffee features THA1, a new variety developed exclusively in Vietnam. An F5 hybrid of Ethiopian and Vietnamese coffee, it took 25 years to cultivate and has only been available to farmers since 2016, offering a rare chance to experience it in its early stages.

This lot comes from 96B’s collaboration with Huong Phung farm, where the THA1 trees are just five years old and this marks only their second harvest.

Processed as an anaerobic natural, ripe cherries undergo five days of dry fermentation followed by 30 days of slow drying. The method enhances the variety’s floral character and layered sweetness.

In the cup, expect sweet prune and fragrant persimmon, alongside playful hints of bubble gum and berry jam. Notes of fermented black tea reminiscent of puer and rich brown sugar bring depth and structure to the finish.

Coffee Wallas

Coffee Wallas was started by co-founder Suneal Pabari and Director of Coffee Dustin Ryan Yu, who are on a mission to put Asian specialty coffee on the map. Sparked by a shared curiosity for underexplored origins, they wanted to shine a light on places that get overlooked, whether it’s because of tricky logistics, inconsistent quality, or just the extra effort involved. Their belief: with patience, partnership, and a little risk, these coffees can stand shoulder-to-shoulder with (or even outshine) the industry’s go-to origins. The name “Coffee Wallas” is a playful nod to India’s chaiwallas, who are synonymous with tea and found on every street corner; it roughly translates to “People of Tea.” “People of Coffee” felt perfect for Suneal and Dustin, capturing not just their obsession with coffee, but the passion of the producers and exporters they work with—everyone doing something challenging, sometimes illogical, all for love of coffee.
