BREW GUIDE

Brewing tips from the roaster:

Grind 20g of this coffee at around #10 on a Baratza Encore, or 7.5 on a Fellow Ode. Pre-wet the Hario filter from a boiling kettle, allow to pour through, and add the coffee grounds to the filter. Once the boiling has settled in the kettle, gently pour 60g of water into the middle of the ground bed. Wait 45 seconds. After a quick stir, slowly pour up to 275g, wait 5s, lift the dripper and give it a quick swirl 3 times. Finish the pour to 340g, the last drop should be at around 1m30s. The coffee should finish dripping at around 2m40s. Enjoy!

I think the coffee was fine, but the brew directions did not yield a good result on V60. I'm using remineralized R.O. water, and a pretty decent Ode Gen 2 grinder.

A #10 setting was recommended on Baratza Encore, which according to Honest Coffee Guide is ~480um, but also recommended was a 7.5 on Fellow Ode, which depending on if Gen 1 or 2 was intended, would be 1100 or 850um, both very course.

I had to guess intent and try 5.2 on my Ode Gen 2. The coffee drew down far too fast, and tasted very weak. I got some nice Cocoa tea notes at first, but had trouble picking out much after that.
