If you had to describe Seven Mystery in three words, what three words would you choose? 
If I had to describe Seven Mystery in three words, I’d choose honesty, approachable, and discovery.
For us, coffee is all about real connections, not just with the coffee itself, but with the people who share the moment. We like to keep things warm and inviting, creating a space where people can just relax and enjoy, like catching up with an old friend. At the core of everything we do is discovery. We’re always exploring, experimenting, and pushing boundaries to uncover new possibilities in coffee—that’s what Seven Mystery is all about.
What is your specialty coffee origin story?
I really got deep into specialty coffee after learning about the role of a roaster. I realized that making a great cup of coffee isn’t just about brewing, it requires a deep understanding of everything behind it. From green beans to roasting and extraction, I wanted to learn it all. That’s what led me down this path to keep learning and refining my skills.
When and why was Seven Mystery founded?
Seven Mystery officially opened in April of 2024, and I’ve been here as a roaster since the beginning. What drew me to this project was the endless possibilities. I was excited to see what would happen when a group of people who truly love coffee came together to build something from scratch. The idea of creating a roastery fueled by passion was something I really wanted to be part of.
What is the reasoning behind the name Seven Mystery?
The name Seven Mystery represents the seven key elements that go into making a great cup of coffee: Origin, variety, cultivation, harvest, processing, roasting, and brewing. Each one is essential. If even one is overlooked, the final cup won’t be the same. The name reflects our commitment to mastering every step of the process with a professional mindset.
What are you most proud of in your journey with Seven Mystery so far?
Honestly, it’s the team, which includes our founder, Taylor and every member who’s part of this journey. We’re always asking ourselves: How can we serve better-quality coffee? What kind of events will help people connect with specialty coffee? Having teammates who are just as passionate about answering these questions makes all the difference.
What’s something exciting that Seven Mystery is currently working on?
We’re always working on coffee workshops, classes, and collaborations, there’s a lot coming up! For example, we’re hosting a class with a well-known barista from across Canada, and at the end of February, we’ll have a workshop featuring the head judge of the SCA Coffee competition. We’ve also done collaborations, like our event with Aesop, and we’re planning more exciting projects in the future. There’s a lot to look forward to, so stay tuned! :)
