How To Make Cascara Muffins!
Cascara, in a baked good? We think so! Here’s our recipe for making yummy, healthy, AND aesthetically pleasing muffins.
2 cups all-purpose flour
1 ¼ cups brown sugar
2 teaspoons baking soda
2 teaspoons ground cinnamon
¼ teaspoon salt
½ cup oats
½ cup unsweetened flaked coconut
½ cup This Cascara
1 tablespoon Blume Tea Beetroot Blend
½ cup vegetable oil
½ cup milk
2 teaspoons vanilla extract
1 . Preheat oven to 350 degrees F. Grease 12 muffin cups or line with paper muffin liners.
2. In a large bowl, mix together all of the dry ingredients until well blended.
3. In a separate bowl, beat together the eggs, oil and vanilla.
4. Stir the egg mixture into the dry mixture just until moistened. Add more Blume Tea Beetroot Blend if you want to enhance the pink colour!
5. Let the batter sit for about ten minutes to let the cascara absorb some moisture. Scoop batter into muffin cups, then bake for 15-20 minutes, until a toothpick inserted into the centre of the muffin comes out clean.
